Researchers have found an explanation for the phenomenon of water skittering on hot surfaces. The reason behind this behavior may be related to a concept referred to as "quantum friction", although the exact mechanism is not entirely clear. Additionally, the movement of jumping bubbles is also thought to play a role in the process, possibly carrying more heat.
